Sometime last year, I was watching a chef on Oprah make a gourmet, dairy-free soup: Celery Root Soup with Granny Apples. It looked beautiful and, based on Oprah’s reaction, sounded delicious. So impressed with the dairy- and animal- free recipes that I was learning about, I went online to purchase the cookbook immediately after the show.
The recipe book The Conscious Cook by Tal Ronnen, the chef who created Oprah’s 21-Day Cleanse menu, shares recipes for meatless cuisine. By applying traditional French culinary techniques to his dishes, Mr. Ronnen creates rich, full flavor that satisfies carnivorous cravings.
We’ve only tried the soups so far and they are delicious, creamy, filling, fully satisfying, and healthy! It’s unbelievable to me that it’s dairy-free!! Relying on a cashew cream sauce, the soups not only provide vitamins and minerals from the required vegetables but also healthy fat and protein from the cashews. The various soup recipes have been such a hit that we haven’t yet had the desire to move on to the other recipes.
My daughter’s favorite is Cream of Asparagus Soup, and we incorporate a few handfuls of spinach into the recipe as well — she doesn’t notice!

Other Favorite Soups:
- Broccoli Leek Soup. We modify this recipe to avoid or reduce animal protein: using cashew cream instead of half and half; and reducing the amount of butter and substituting with olive oil. We’ve added avocado, sweet potatoes, and whatever seemingly appropriate vegetables we find in the refrigerator. It’s delicious!
